When it is your whiskey that will be distilled and placed into a barrel for the first time that it will just look like moonshine and not really the scotch or bourbon that you hope to see. You are used to seeing whiskey its golden brown color but when it is first distilled that it will have that perfectly clear look. When whiskey will have at its early stage that it will taste exactly like malted barley, the main ingredients of this liquor. But when it will be placed into wooden barrel that things will start t get different and interesting.

There are new barrels that will be used when it is bourbon that will be aged. After the bourbons have aged that it will then be used by the scotch whisky distillers. It is the remaining flavors that the scotch whisky will get as they will stay longer in the barrels. The distinct smoky flavor that whiskey has is caused by phenol which is a new chemical component that can be achieved after this process.
It is also the climate that will play an important role in the taste of the whiskey. It is when bourbon is made that its stored in a dry environment which helps in faster evaporation and concentration. There is a more humid environment when aging scotch whiskeys.
